Happy New Year! 2013 was filled with many challenges, changes and blessings. In many ways, my life was given a somewhat involuntary overhaul – for which I will always be grateful. Its like a total life makeover! Sometimes embracing drastic changes can be daunting – even scary at times.

Regardless if a situation is “good” for us or not – we tend to find comfort at the expected. So when things get shaken up (particularly when its not directly by our own doing), its natural for the fight or flight instincts to kick it. There was a time I would stick my head in the sand – but this time I chose FIGHT. Fight for your family, friends and for what you believe in. If you’re in a toxic situation – take a step back, assess and proceed with conviction. Whether you need to get a grip on your health, love life or embracing organic skin care – I wish you all success and happiness!!

Quinoa Broccoli Casserole
Eating healthy when you have a family isn’t easy – I don’t care what anyone says. You have different palettes and volume requirements to satisfy. Shopping at Wholefoods for organic tofu can easily run you $75 for a single bag of groceries. So I split the difference. I take easy homestyle classics and reinvent them with healthier ingredients. Maybe that’s why this has been repinned over 150x on Pinterest!
The original version of this casserole had white rice, cheese, no protein and ranch dressing – it sounded yummy but as far from healthy as you could get. So I reinvented it – Quinoa (brown it before cooking for a more complex, nutty flavor), shredded vegan cheese, 1 egg (the original recipe had 2) and lean chicken. I tried to think of something witty and inspiring to write in this section – but truth be known, I can’t think of anything that won’t come off as predictable or contrived. Instead, I am featuring a collage of ART that my oldest daughter Zoe Star has created over the years. My favorite is this FACE that she did when she was around 3 years old. It captures EXACTLY how I feel sometimes! LOL! She has moved on to drawing fierce dragons (they are amazing – and better than boys) but it will always amaze me how wonderfully creative kids are. I have a rather large collection of art scattered on my desk from my little Elie Breeze. I will have to scan and share some of her art too.
