Wicked Turkey Tacos
Happy Cinco de Mayo! I love Mexican food. One of my favorite restaurants in Hawaii (since I can’t get Cafe Coyote here) is Mexico Restaurant in Kalihi. Their Chile Verde, Chile Relleno and Shredded Beef Enchiladas are amazing. In our humble Asian house – we have our version of taco night (complete with a side of New England Clam Chowder – don’t ask, but try it). Since we’re trying to eat healthy at work – I decided to modify the usual ground beef tacos and made these nearly fat-free turkey tacos. Scratch that. WICKED TURKEY TACOS. What’s even better – its relatively easy and even my picky kids loved them.
• 1-3 lbs. ground turkey breast (regular ground turkey has more fat)
• 1 cup chicken broth
• salt and pepper to taste
• 1 cup of fresh salsa (mild, medium or hot – your choice) per pound of meat
• 1/2 – 1/3 packet of taco seasoning per pound of meat or more to taste
*You can opt. to season it yourself or find an all-natural option
• 1 red onion – chopped
• cilantro – chopped
• 1 small cup plain fat-free Greek Yogurt + 1 Tablespoon taco seasoning
• shredded cheese (or vegan cheese)
• Super Grain Dippin’ Chips, Taco Shells or Tortillas
• Jalapenos, Hot Sauce
Cook ground turkey breast in a pot using chicken broth, salt & pepper instead of oil. Be sure to crumble it till the meat is relatively fine. When meat is done, add red onion and cook till onion is softened. Add salsa and taco seasoning. If meat seems dry – add more broth and/or salsa. Add a handful or so of cilantro right before serving.
Mix yogurt and taco seasoning – use in place of sour cream if desired.
Top chips (the Dippin’ Chips make cute mini tacos), Taco Shells or Tortillas with meat, cheese, lettuce, salsa (or plain tomatoes), jalapenos and hot sauce. You can make it as a salad or traditional tacos.
LEFT OVERS: The second night I filled the shells with meat and cheese and threw them in the oven at 250° till the cheese was good and melted. The tacos were a little softer, but it was fast! I don’t know about you, but as much as I love to cook, some nights – easier wins.
**I’m not sure what the nutritional content is – but I know its hella lot healthier than regular ground beef tacos!
