Kale SaladKALE. It’s the It Girl of the vegetable world. Health buffs are packing into their smoothies, protein bars and chips. On its own, kale is fairly tasteless with a hearty texture – honestly, barely edible.


This simple, colorful salad makes kale more palatable if not craveable. A simple combination of kale (chopped), dried cranberries, pecans, candied ginger and star fruit is brought together with a bright dressing made with lemon juice, honey, red wine vinegar, olive oil, salt and pepper.

There is no recipe for this – I eyeball each ingredient, heavier on the lemon juice and vinegar, easy on the oil – adding honey, salt and pepper to taste. The chewiness of the cranberries, crunch of the pecans and the surprising flavor of the star fruit and ginger will have you hoarding kale at the Farmers’ Market this weekend.





Cocoppa is an Apple and Android (thank you!) app that allows you to exchange your boring default icons for cute, cool, edgy ones – or even design your own!!

I use this in conjunction with the Go Launcher app for Android to completely customize my home screen with a calendar widget and the apps I use most. With Go Launcher you can also customize your icon size, dock apps, side dock, background and animation settings.

Seeing the cute little piggies, puppies and happy backgrounds makes me happy and adds a nice bit of cheer to my day.
